Food for the Holidays

This week’s show, Food for the Holidays, features a cadre of food and wine savants, those who know it best. They’re here today to tell us about it. But before we get there, Susi and I will give our listeners a preview of what to expect when shopping this holiday season from some of the most unique markets in the world.

For food & wine and tradition we turn to Jim Poris, Sr. Editor at FOOD ARTS magazine where he writes about all sorts of kitchen designs and the necessary tools for today’s best known celebrity chefs like Anthony Bourdain, Betty Fussell and Gerry Dawes. A cook himself, a la Picholine, he’s a graduate of the French Culinary Institute in NY and a veteran of the news media including The International Herald Tribune in Paris and the New York Daily News in NY. Jim will also talk about his own family’s holiday traditions going back to 1890. Wow!

Hank Balle is a Chef himself. He comes to us from EATALY, the new all-in-one mega-store located in NYC that has no less than a half-dozen restaurants and products from nearly every part of Italy. From the Loire Valley in France to UCLA in California, Mr.Balle learned his craft the hard way — by doing. A graduate of the Culinary Institute of America, he has served at a number of leading restaurants in the New York area including The Four Seasons, Artisanal, Miriam and Foragers Market where he was the G.M. He’s now G.M of EATALY’s Meat Department where he can tell you about what cut of meat to shop for this holiday season.

Anna Maria Sorrentino is Founder & President of ShopWineandDine.com, a company that develops tours to exotic destinations like Italy where she was born and where food and wine have a talent all their own. In her previous life she held a number of major positions in marketing and sales in the airline industry. Baugna Cauda, is one of the many vegetable dishes from the Piedmont region of Italy. It’s a holiday favorite of Anna Maria’s along with an array of other recipes which we’ve included on our Web site for today’s show.

Discovering the Caribbean, show #162, Thurs., June 3:

Next week, from June 6-12, over 10,000 individuals representing a wide cross-section of interests  will converge in NYC to celebrate the Caribbean Week, an annual salute to the many countries and  territories that comprise that region, 34 in all. Seminars, conferences, trade events, sporting events,religious gatherings, samplings of native cuisine throughout the city and more are  part of this program.
On June 11 at the Plaza Hotel the 37th annual Caribbean Ball  will take place.

On June 12 the CTO ( Caribbean Tourism Organization ) will host a Caribbean Travel & Culture fair at North Plaza, at Lincoln Center.Today’s guests include individual members from that community who will discuss tourism, the arts, customs and traditions, festivals and music, and the food of the Caribbean basis. Title: Puerto Rico: The Shining Star of the Caribbean

The island of Puerto Rico was discovered by Columbus on his second voyage in 1493. Adopted as the “rich port” or puerto rico” by the Spanish royalists it became Spain’s leading port of entry to the new world by the 16th century.

The Treaty of Paris in 1898 ceded the island from Spain to the U.S. It now enjoys a Commonwealth  status with the U.S. Today, Puerto Rico is a thriving metropolis of 3 million+ and 78 municipos, with 10 airports, and a centralized infrastructure. Tourism is its most visible product, wrapped around an inspired international culture. San Juan is the capital city.
